A fresh and fruit-filled salad with homemade, sweet and savory pistachio and sunflower seed croutons on top, this salad comes together in less than 30 minutes.
Confession: I basically make the same lunch salad to take to work every day, Monday through Thursday (I work from home on Fridays). I liken my salad habit to Simon Cowell’s grey t-shirt habit. It’s one less thing to think about and it works. So why fix it? Plus it’s an easy way to get my greens in for the day. It may not work for everybody, but it works for me!
This salad isn’t the only thing I have for lunch at work, I generally take some other snacks and indulge in some office snacks. My favorite work snack that my office supplies is the sea salt dark chocolate covered almonds they buy from Costco in giant bags. Those are dangerous! Moving away from the sweet treats and back to the green stuff…
There’s lots of fresh fruit in this salad so you know it’s geared up for sweet sweet summertime! Now that Memorial Day has come and past, it’s prime time for all the Summer foods.
What did you do for Memorial Day? Wade and I stayed in Austin, but we tried to have some mini adventures to celebrate our 3 day weekend. We went to our first comedy show in Austin on that Friday. It was great and I would definitely go back to see a particular comedian in Austin, Vanessa Gonzalez. She was hilarious!
And on Sunday we ventured to the Westin in downtown. They have a pool on their rooftop so we decided to live the high life for a little while…(get it?! High life? Rooftop pool?…) Truthfully, we didn’t stay at the Westin as it’s much too rich for our blood, but luckily they open up their rooftop pool to the public for FREE on certain days of the week. Had to take advantage of that! It was a beautiful view up there and it made us feel especially fancy for a little while.
Overall, the Memorial Day weekend was a success. And I’ll be honest, I’m pretty much always in the mood for fresh fruit. Therefore it’s a given that it would show up in one of my favorite salad combos.
As for the pistachio and sunflower seed croutons, that was an idea that came to mind when I was thinking of sharing this recipe with y’all on the blog. I don’t normally add these homemade croutons to my salad, but I’m glad I gave them a try. I might have left them in the oven a liiiitttlle too long this time, but now I have a better idea as to how long to bake them.
This salad would be perfect to take to that next family BBQ or dinner party. It’s quick, easy, healthy, and got a little bit of something that everyone would enjoy. The pistachio and sunflower seed croutons just take it to a whole ‘nother level. Salads aren’t boring anymore, my friends.
