A giant funfetti cookie made with whole wheat flour, this cookie could be shared by two people or it could make a special treat for one, particularly on a birthday!
Guess who’s birthday we celebrated this past weekend?! That would be this handsome fella here.
Wade turned 24 on Saturday, February 27th. The day of Wade’s birthday we were supposed to take a tour of the Circuit of the Americas race track (Wade loves cars and he’s wanting to take a tour of this track for a while) but a particular Bernie Sanders decided to announce just 12 hours prior that he was going to make a stop on his rally tour to the Circuit on Saturday the 27th. It would have been nice to know this before Wade and I drove 30 miles to get to the race track…
The birthday weekend didn’t start out to well with cancelled plans to tour the race track. But the weekend sure did end well with a date with some friends to Top Golf Austin. This was only my second time at Top Golf. Jessica was there, along with Wade and I’s financial adviser and her fiance who we’ve become fast friends with.
Speaking of birthdays, what is a birthday without lots of sprinkles? Like all the sprinkles in this GIANT funfetti cookie? Funny thing is Wade doesn’t even like sprinkles and he’s not even a fan of cookies unless they are oatmeal (with no raisins). The life and times of a picky eater, I tell ya.
So you could say I made this cookie for myself. Hey, I like birthdays. I like celebrations of any sort. And I say you can turn any day into a celebration with this massive cookie of deliciousness. And don’t worry, I still made Wade a white cake with vanilla frosting.
Why whole wheat? Because it’s a bit healthier than all-purpose flour, for one (yay fiber!), but I also just prefer the taste of whole wheat flour in baked goods. And so does the fiance. Guess what?! He even tried a bite of the cookie and gave it a thumbs up! So now you know it has to be good.
This cookie comes together in 5 minutes and bakes for about 15-17 minutes. You can have your own massive funfetti cookie to make any day a celebration. You COULD share this cookie because it is so large, but I won’t say you have to. 😉
Giant Whole Wheat Funfetti Cookie for One
Servings: 1 (or 2 if you’re feeling generous)
2 Tbsp. grass fed butter (I used Kerrygold), softened to room temperature
3 Tbsp. coconut palm sugar
2 Tbsp. beaten egg (Crack open one whole egg; beat; use 2 Tbsp. of that beaten egg)
1/2 tsp. vanilla extract
1/4 tsp. butter extract
6 Tbsp. whole wheat flour
1/4 tsp. baking soda
1/4 tsp. salt
1/4 tsp. cream of tartar
1 heaping Tbsp. of sprinkles
Preheat oven to 350 degrees. Cover a cookie sheet with parchment paper or spray with nonstick cooking spray.
In a medium bowl, combine butter and coconut palm sugar until it forms into a paste. Add egg and extracts and mix well. Add whole wheat flour, baking soda, salt, cream of tartar, and sprinkles, and mix until just combined. Do not overmix.
Form cookie into a ball on the prepared baking sheet. Bake for 15-17 minutes until center of cookie is not longer “doughy” to the touch and edges are beginning to brown. Remove from oven. Allow to cool on baking sheet for 2 minutes before removing to cooling rack.
